How Much Does Your Angus Beef Cost?

We price our beef at $6.50 per pound hanging weight, including all processing fees, for a fantastic deal on premium Angus. For a whole beef, expect:

  • Cost: Approximately $3,900, depending on the steer’s size (typically 600 lbs. hanging weight). *What is hanging weight
  • Take-Home Weight: Around 400 lbs. of delicious, ready-to-cook beef.
  • Cost per Pound Take-Home: Roughly $9.75/lb.

Smaller options:

  • Half Beef: ~$2,000
  • Quarter Beef: ~$1,000

Note: Weights and prices vary slightly by animal.

What Happens After I Place My Order?

  1. Reserve your whole, half, or quarter beef. Our next availability is June–August 2025.
  2. We deliver the beef to our trusted processor, who weighs it (hanging weight) within a few days. We’ll calculate your total cost then.
  3. After dry-aging for about 14 days and processing, the butcher will contact you for pickup. Full payment is due at that time.

How Much Meat Will I Take Home?

You’ll get about 40-45% of the live weight as take-home meat—typically 400-450 lbs. That’s enough steaks, roasts, and ground beef to stock your freezer for months!

How Much Freezer Space Do I Need for a Quarter Beef?

Plan for 1 cubic foot of freezer space per 30 lbs. of meat. For a quarter beef (~122–142 lbs.), a 5–7 cu. ft. freezer provides plenty of room with space for extras.

What Cuts of Meat Are Included in a Quarter Beef?

A traditionally processed quarter beef includes:

  • 25% Steaks (e.g., ribeye, sirloin, T-bone)
  • 25% Roasts (e.g., chuck, arm)
  • 40% Ground Beef
  • 5–10% Miscellaneous Cuts (e.g., soup bones, liver, brisket)

Can I Customize My Beef Cuts?

Yes! We offer custom processing for all packages—whole, half, or quarter. Our skilled butcher will work with you to get your Angus beef just the way you like it.

What Is a Standard Cut?

Our standard cut includes:

  • Ground Beef & Stew Meat: 1-lb. packages
  • Steaks: 2 per pack
  • Roasts: 3–4 lbs. each
  • Optional: Liver and soup bones (available on request)

How Long Does It Take to Receive My Beef?

butcher shop

Your beef is dry-aged for up to 14 days for peak flavor and tenderness, and it’s ready for pickup within 3 weeks of delivery to the processor (e.g., August–September 2025 for our next batch).

Do You Sell Grass-Fed Beef?

Absolutely! All our Angus beef is grass-fed, finished on grain to enhance marbling, flavor, and tenderness—delivering premium quality straight from our farm.

What Is a Split Quarter?

After harvest, a steer is divided into front (chuck roasts, rib steaks) and hindquarters (sirloin, T-bone steaks). Our split quarter blends cuts from both, giving you a variety of steaks and roasts in your 1/4 beef package.

What Is Hanging Weight?

Hanging weight is the weight after slaughter, once the head, organs, and legs are removed—typically 58–60% of live weight for Angus beef. We base our $6.50/lb—pricing on this, averaging 580-650 lbs. per steer.

When Will My Reserved Order Be Ready for Pickup?

For 2025 orders, your packaged beef will be ready at Williams Bros. Processing in Washington, MO, about 3 weeks after delivery—around July or August 2025. Ready to stock your freezer? Reserve today!
